Hi Nicole, I use the packet of Bertolini Vanilla Baking Powder but you can substitute it with regular baking powder. As for the flour, you can easily substitute it with all purpose flour. I have not used spelt, but the gluten content is low, so you may want to use half and half in order to get the right structure and texture. Enjoy!
